I think we are all in agreement that the reunion was a wonderful thing. I hope others are as happy as I am that I was able to make it and meet and visit with everyone. The Saturday night potluck spurred folks to gather up Williams and Hendry recipes and pass them to the mailing list. I thought it made sense to add them here as well.

Grits And Salmon (first version -- subject to revision)

  • grits cooked in beef bullion
  • add butter (or margerine)
  • salsa
  • cheese - and finally
  • salmon (skin and bones removed)

Nama's Apple Cake

  • 3 C flour
  • 3 C diced peeled apples
  • 2 C granulated sugar
  • 1 C chopped nuts (may be omitted)
  • 3/4 to 1 C Wesson oil
  • 2 eggs (3)
  • 1 tsp soda
  • 1/2 tsp salt
  • 1 to 2 tsp vanilla
  • 1 tsp cinnamon
Sift all dry ingredients together. Mix eggs with oil and add to dry ingredients. The mixture will be real stiff. Add apples, nuts, and vanilla. Mix well. Pour in greased tube pan and bake 1 hour and 15 minutes or until done.
 
Let cake get cold before removing from pan.

Topping

  • 1 C brown sugar
  • 1/4 C milk
  • 1 stick margarine
Combine and cook 2 1/2 minutes. Pour hot over cake.

Grandmommie's (or Aunt Lorraine's) Baked Macaroni & Cheese
serves lots

  • 1.5 lbs macoroni
  • 4 eggs
  • 12-16 oz. grated cheddar cheese
  • 1 quart milk
  • salt & pepper
Preheat oven to 375. Cook macaroni in boiling salted water (about 8-10 quarts, several tsp of salt) about 8 minutes. Drain macaroni. Beat eggs into milk, add salt and pepper to taste (2 tsp salt, 1/2 tsp pepper). Set about 1/4 of the grated cheese aside and mix rest with pasta and egg/milk mixture. Spray a large baking dish (I used a roasting pan) with Pam (or other cooking spray), add mixture and top with remaining grated chese. Bake uncovered for about 45 minutes, untill cheese is browned. If your batch is smaller than this huge one, it may be baked in a loaf pan, and will probably be done now. To see if it is done, poke a knife into the center and tilt it to the side. If you can still see liquid egg/milk mixture it is not done. In this case (large batch), cover the mixture to keep the top noodles from drying out, and bake for another 15 minutes, then test again.

Nama's (Nana's) Steak and Onions
serves 6

  • 2 lb. round steak about 1/2 inch thick
  • 1/2 c flour
  • 5 lb. onions
  • 3/4 c water
  • salt and pepper to taste
Cut steak into pieces about 3" x3" and pound flour into steak with edge of a saucer. Brown steak in a well greased frying pan on medium high. Slice onions into rings about 1/2 inches wide. Add 3 lb. onions and water to steak and simmer, stirring to prevent sticking every five minutes. After one hour, add remaining 2 lb. onions (first batch will have cooked down) and continue simmering and stirring for another 1 1/2 hours. Add salt and pepper to taste. Meat should cut easily with a fork.
